Creamy Chicken Rigatoni

Creamy Chicken and Rigatoni

 I enjoy coming across great recipes and making them my own. This is my version of one of my favorites. I like sharing recipes. Hope you give it a try and make it your own. Enjoy.


1 pound boneless chicken breast, skinned, cut into 1-inch pieces

1-2 tbls olive oil (evoo)

2 cloves garlic finely chopped

 2 tsp dried basil

2 tsp dried oregano

2 tsp curry powder (more or less)

2 cans diced tomatoes, drained (14.5 oz cans)

2 cups heavy cream

½ tsp salt

½ tsp pepper

¼ tsp ground red pepper, or to taste

2- 3 cups fresh broccoli florets

1 pkg sliced mushrooms

1 jar (16 oz) caramelized onions and roasted red peppers (got them at Walmart)

1 pkg (16 oz) rigatoni or penne pasta

Freshly grated parmesan reggiano cheese


 Heat 1 tbls olive oil in skillet. Add chicken and spices. When close to being done, add chopped garlic, a little more olive oil and mushrooms. Saut’e till done. While you’re doing this, bring water to a boil to cook the pasta.


 In your blender, add your cream and jar of peppers and onions. Puree till smooth and add to chicken along with the broccoli. Simmer for 5 – 10 minutes and season to taste. Add cooked pasta and serve with freshly grated cheese.

 It’s that easy.
