Here is a story on how I came across the best Enchilada Recipe that is quick and easy with only a few ingredients; perfect for the home cook who doesn’t have a lot of time.
While stationed at Ramstein Air Force Base in Germany, I had the pleasure of managing a dining facility serving 2000 meals a day. Menu planning was a fun part of the job. Once a week I would offer and ethnic meal, Usually on Wednesdays. That week was Mexican.
Managing the operation was great, put what I really enjoyed was rolling up my sleeves and prepare these special meals. I had put Beef Enchiladas on the menu as one of the entrées. We used standard Air Force Recipes. Some had a lot to be desired but this one was really good. The recipes started with making the Chili Gravy. While following the recipe, I tasted it before putting in the Mexican spices. It tasted just like Campbell’s Tomato soup. That’s when I knew I could make this at home with very little effort and with the ingredients I have at home.
Over the years I have experimented with different Enchilada recipes. The basic ground beef recipe is always a hit. My son and daughter in-law always look forward to it when they come for dinner. Any left overs has to go home with them.
On one occasion while at the local grocery store and wanting to try something different for dinner, I noticed the cooked Roasted Chicken in the deli section. I thought to myself; that would make excellent Chicken Enchiladas. Sometimes it takes one just one ingredient to get inspired. I bought it and thought I would give it a try. I’m so glad I did. I’ve always enjoyed Chicken Enchiladas but never thought about using a Roasted Chicken in it. The garlic Roasted Chicken worked real well. Especially since I’m trying to eat healthier. Another advantage for using this ingredient was that I had enough Chicken left over to make a few other meals. I was able to make Homemade Chicken Noodle Soup in my slow cooker and Chicken Fajitas with what I did not use for the Enchiladas.
This journey started with just a basic Beef Enchilada recipe. It also gives me the opportunity to serve fresh Salsa with all those Tomatoes and Green Peppers I have in the garden every year.
