- 2 ½ cups flour
- 1/8 tsp salt
- 3 eggs
- 2 tsp olive oil (evoo)
On a clean work surface, form a well in the center of the flour. Add salt, eggs and evoo. With a fork, start incorporating the flour till it comes together. If dough is to sticky, add a little more flour, if to dry add a little more water. Using your hands, start kneading the dough for about 5 to 10 minutes or until smooth and elastic. Cover with plastic wrap or towel and let rest for 15 to 20 minutes.
Now it’s time to start rolling.
Divide dough into 4 portions. Keep dough wrapped while you work with one portion. On a floured work surface, form a dough oval. Run dough through the Pasta Roller at the widest setting. Fold into a 3rd and run through few more times, folding over a 3rd each time.
Now adjust setting down a notch and continue to roll dough through, adjusting setting down one each time you put it through till you get desired thickness. For lasagna, you’re done. For Linguine or spaghetti, put dough through those roller attachments. You can hang pasta on a drying tree or cook pasta right away. Cooking only takes a couple of minutes. With this basic egg recipe, you can incorporate other ingredients such as Spinach, Herbs and cheese just to name a few. Hope you enjoy.
