Roasted Garlic Butter Smashed Potatoes 🥔🧄 (Crispy Outside, Fluffy Inside)

Introduction

If you love crispy edges and soft, fluffy centers, Roasted Garlic Butter Smashed Potatoes are the perfect side dish. These golden beauties are boiled until tender, gently smashed, then roasted with garlic butter until irresistibly crispy.

Smashed potatoes are a popular modern twist on traditional roasted potatoes, inspired by rustic European cooking styles—especially in countries like Ireland, where potatoes are a staple ingredient.

Ingredients (Serves 4–5)

  • 1.5 lbs (700g) baby Yukon gold or red potatoes
  • 4 tbsp unsalted butter, melted
  • 3–4 cloves garlic, minced
  • 1–2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme or rosemary (optional)
  • Fresh parsley, chopped (for garnish)
  • Optional: grated Parmesan cheese

Timing

  • Prep Time: 10 minutes
  • Boil Time: 15–20 minutes
  • Roast Time: 25–30 minutes
  • Total Time: ~55 minutes

Instructions

Step 1: Boil the Potatoes

  1. Place potatoes in a large pot and cover with cold salted water.
  2. Bring to a boil and cook 15–20 minutes until fork-tender.
  3. Drain and let them steam-dry for 5 minutes (this helps crispiness).

Step 2: Smash

  1. Preheat oven to 425°F (220°C).
  2. Place potatoes on a lined baking sheet.
  3. Using the bottom of a glass or potato masher, gently press each potato until flattened but still intact.

Step 3: Garlic Butter

  1. Mix melted butter, minced garlic, olive oil, salt, pepper, and herbs.
  2. Brush generously over each smashed potato.

Step 4: Roast

  1. Roast for 25–30 minutes until edges are deeply golden and crispy.
  2. For extra crispiness, broil for 2–3 minutes at the end (watch carefully).

Step 5: Garnish & Serve

Sprinkle with fresh parsley and optional Parmesan. Serve hot and crispy.

✨ Optional: Add a dollop of sour cream or drizzle with garlic aioli.

Flavor Variations

  • Add smoked paprika for a smoky kick.
  • Top with shredded cheddar and broil briefly.
  • Sprinkle with chili flakes for heat.
  • Use garlic powder if fresh garlic isn’t available (add before roasting).

Common Mistakes to Avoid

  1. Not boiling until fully tender (won’t smash properly)
  2. Skipping steam-drying (reduces crispiness)
  3. Overcrowding the pan (prevents browning)
  4. Burning garlic (mix with butter to protect it)

Storage & Reheating

  • Store leftovers in the fridge up to 3 days.
  • Reheat in oven or air fryer at 375°F (190°C) for best crispiness.
  • Avoid microwaving if you want to keep them crispy.
